Arrive at a casual sushi restaurant in Nagoya, a city in Aichi Prefecture that sits at the heart of Japan’s Chubu region. Unlike formal omakase settings, this venue operates as an approachable, everyday dining spot — the kind of place locals actually eat.

As you settle in, your guide introduces the session and explains what you will make, setting a relaxed tone before the hands-on work begins. Your guide demonstrates each technique, showing you how to press and shape nigiri, handle the rice, and assemble rolls.

Follow along step by step, working with the ingredients used at the restaurant. Your guide explains the techniques throughout and answers your questions so you can understand each step. Move through each stage at a pace that lets you focus on practising the techniques.

By the end of the session, you will have made sushi yourself — nigiri shaped with your own hands and rolls you assembled from start to finish. Sit down to eat what you made, finishing the 90-minute experience with a direct result of your own effort.
