Arrive at a casual sushi restaurant in Itoshima, a coastal area west of Fukuoka city known for its access to fresh local seafood. Settle in and listen as your guide introduces the session and explains how the next 90 minutes will unfold.

Enjoy the relaxed setting of a area restaurant — rather than a formal sushi counter — making the experience approachable from the start. Quickly get a sense of the craft behind something that can look deceptively simple.

Learn nigiri-making techniques from your guide, who will explain each movement so you can follow along. Shape the rice, position the topping, and press each piece together as you practice.

Your guide will answer questions throughout, including those about rice seasoning, fish selection, or hand pressure, helping you understand the techniques in real time.

By the end of the session, you have shaped your own nigiri pieces and eaten what you made. Leave with a clearer understanding of how rice preparation, topping balance, and hand technique combine to produce a finished piece of sushi — knowledge that comes directly from working through the process yourself rather than watching from a distance.
