The giants of La Mancha, as Don Quixote might have seen them. Twelve windmills remain, perched atop a ridge overlooking the town of Consuegra. It's an easy day trip from either Madrid or Toledo, or stay the night and catch the windmills all lit up at night. The windmills were built in the 16th century and used right up until the 1980s to grind grain into flour. The ones still standing are in pretty good shape, and you can venture inside for a lesson in how they operate. Hint: The tops of the windmills can be rotated to make good use of the prevailing wind. One of the windmills, named Sancho, is even cranked up and placed back into service each year as part of the Saffron Rose Festival.
