We refer to the reviewer’s recent stay at The Fortress Resort and Spa. We appreciate the constructive appreciation made regarding the architectural aspect of the hotel, the Staff, Pool area etc. We are however, very surprised with the negative comment with regard to the Sri Lankan dishes and fine dining menu , especially when the majority of our guests have praised our Sri Lankan dishes which are rated very good and excellent. The preparation of the signature Sri Lankan curry dishes are prepared taken into consideration that most European clients palates do not agree to very spicy dishes. Due to this reason all dishes are prepared at a very mild level. In the event a client requests the curries to be less spicy, it is done by adding coconut milk to reduce the spiciness. Naturally the color and taste would change. The secret behind the taste and color of the Sri Lankan dishes are the spices which are added. The mise en place for all dishes are done well in advance as done in any hotel around the world. The resort does not serve left over dishes and do not agree with the clients comment ‘what we presume was, last night’s left over curry’. Being located adjacent to the sea it takes a considerable effort and time to up keep the building in perfect shape in the Monsoon period with the humidity factor and apologize for the inconvenience caused to the clients by the damp conditions. Beach cleaning is done on a daily basis by the hotel and have already taken the initiative and placed waste bins , cloth hanger's and a bicycle stand for the local community using the beach to help in keeping the beach clean.
